Pine nuts, also called pignoli, pignolia or pignons, are small seeds extracted from the pine cones of the stone pine tree.
Pine nuts are high in oil. While they are very nutritious, they go rancid quickly. They taste a bit like almonds, but more pronounced.
Pine nuts are off-white in colour and are usually harvested from October to March.
Ingestion and side effects
Pine nuts are often eaten raw or roasted. They can also be used in pastries, pasta, rice, pesto, salad and many other dishes.
Some people may experience side effects, such as a taste disturbance, after eating pine nuts. This phenomenon occurs one to several days after the nuts are eaten, and lasts up to a week on average.
The main side effect is dysgeusia, a disturbance that leads to a bitter, metallic taste in the mouth. This taste distortion disappears on its own. The problem is more common after eating pine nuts imported from Asia, specifically China or Korea.
Aside from the taste disturbance, pine nuts pose no other health risks.
Storing pine nuts
Pine nuts spoil quickly. It is best to buy them in small quantities and use them up fast.
Pine nuts can be stored for two to three weeks in an airtight container away from light, heat and humidity. They can be kept in the refrigerator for three months and in the freezer for nine months.
