Job description

These individuals prepare animal carcasses and make a first cut. They then make a finishing cut.

  • Controlled ambient temperature
  • Equipment, machinery, tools

Main tasks

  • Remove or treat skin.
  • Eviscerate and clean carcasses.
  • Remove bones and fat from the meat.
  • Cut or saw carcasses into pieces of meat.
  • Cut the meat according to the type of piece desired.
  • Prepare pieces of meat for refrigeration.

Advancement and mobility

  • Experience leads to senior or supervisory positions.

Training and requirements

Formation

No specific training

Sometimes required

  • A Forklift Operator competency card may be required.
  • Certificate of vocational qualification sometimes issued by the ministère de l’Emploi et de la Solidarité sociale (MESS).
